Quick Creamy Vegetable Soup

Ingredients:
4 – 5 cups/1 – 1.25 litres of leftover cooked vegetables (or cook some just for soup!)
2 cups/500ml water
1 tin of coconut cream
1 tablespoon/15ml curry powder – more if you like it spicy
1/2 teaspoon/2.5ml sea salt
Process:
Place all ingredients in your blender, if you have a Blendtec or Vitamix the order does not really matter, if you don’t then put all liquids, the curry powder & salt and then the vegetables.
Blend until smooth
Heat the portion you want to eat now, store the rest in the fridge
I used brussels sprouts, cauliflower and broccoli, the soup was so creamy and so delicious.
You can mix up the vegetables to be anything you like and you can add more water, broth, coconut water/milk/cream as you like to achieve the desired thickness for you and your family.
