Blueberry Oatmeal

This makes 2 servings

We need to start out with some rolled oats, chia seeds and water.

Place 3 cups/500 ml of water in a saucepan on the stove, add 1 cup/250 ml rolled oats and 1/4 cup/60 ml chia seeds and whisk together until all is mixed.  This should be done while the saucepan is being heated on a medium heat.  The oats I use, only oats, need to cook for 8 minutes, you should check your oat package to determine how long they need to cook for. Chia seeds are good to go no matter what they are eaten with.

* Please note that I have added additional water to accommodate the Chia seeds, the only oats recommend 1 cup/ 250 ml of oats for 2 cups/500 ml of water, please check your oats to see the ratio they recommend and then add another cup for the Chia seeds.

Once your oat mixture comes to the boil it should be turned down to be just simmering.  It should be stirred a couple of times to ensure that the mixture is not sticking to the saucepan. At this stage I put the timer on for 5 minutes.

When the timer goes off I add my blueberries, I don’t really measure these, I shake them from the bag, frozen, onto the top of my oat mixture and stir in.  My best guess is at least 1 cup/250 ml.  Once I have stirred these in I put the timer on for another 3 minutes to complete the cooking process.  I do check the stove setting and sometimes need to bump the heat up a little because of the frozen berries.

Once the timer goes off I stir the oat mixture and place it into two bowls.  Then I add about 1/8 cup/30 ml Maple Flakes and 1 tblsp/15 ml Hemp Heart Toppers per bowl. The toppers I am using right now are Maple Cinnamon, there are a couple of different flavours you can try or you can use straight Hemp Seeds if you like.

In this meal you are getting good sources of protein, oats, chia seeds and hemp seeds, antioxidants from the blueberries, essential minerals from the maple flakes and omega 3 fatty acids from the chia seeds. All this along with a great tasting meal.

You can mix this up as you like, use your choice of milk instead of water, change up the toppings or just eat the oat mixture plain, it is your choice on how you eat this wonderful meal to start or end your day.
